想問一下這樣的說法的客觀根據在哪邊啊?
食材多樣性來說法國料理應該也很驚人(一堆貴族打獵找野味),
但如果考慮到中原當了上千年的經濟強勢區,
貴族對食材的要求應該比較寬裕...
這點應該可以算中華料理略勝
烹飪手法跟技法多寡來說,
好像法國料理中的奇葩食譜中的千奇百怪數量也能與之比較。
(坦白說我覺得中華料理的功夫菜都是看起來功夫驚人但味道普普)
(但我也沒吃過古典的法國菜...也就是那些百年前的食譜)
是有聽說過中華料理百菜百味的說法,
光是一道菜在各地技法有變化就變不同名字,
甚至被各方支持說是不同的菜。
像是基本型的東坡肉,醬油燉肉的概念,
延伸的台灣滷肉、虎皮肉、OO肉,千變萬化。
但說真的除非作得非常好或者非常差,
吃起來的感覺也是萬變不離其宗,
也不會有特別好吃的感覺。

還是料理菜系的優劣是以食譜數量來判斷的嗎?
(這點應該中華料理應該壓勝)
