[問題] 煎牛排 雖然粉紅肉質很漂亮 但表面都焦了
我煎牛排所參考的影片
其實還蠻容易了解的(我想要的是"不容易出錯"的訣竅)

我用我的破英文歸納一下....
1. 牛排不要太薄
2. 牛肉放置到室溫後才開始處理
3. 肉身抹上海量的海鹽與黑胡椒, 然後用海量的橄欖油塗抹均勻(1:30秒處)
4. 鍋子乾燒 熱後牛肉才下鍋! 每分鐘翻一次
5. 確定你要的生熟度後準備起鍋
6. 起鍋前抹一些大蒜奶油, 然後用不知道什麼樹枝拍打一翻(應該是調味)
7. 起鍋後靜置3~4分鐘後才開始食用
今天我挑了一塊不錯厚的牛肉, 其實肉質鮮甜怎樣我其實沒有很在意
因為我今天只是要練習而已啦~
[我的問題....]
1. 塗抹海鹽與黑胡椒, 真的可以灑那麼多嗎?
我看他灑得幾乎要蓋住肉身了耶
2. 煎好後肉質的確是很漂亮的粉紅, 但表面焦了!!
請問我這樣是不是因為火太大了?
(我沒有理解到他關於火力的建議, 我用的是中大火)
還是我1分鐘翻面其實拖太久了?
還是鍋子的關係? (我鍋子是平底鑄鐵鍋, 不像他那種還有肋骨的鐵鍋)
