[問題] 新手煎雞胸肉&熱鍋熱油請教
最近開始吃煎雞胸肉,
但五次裡面會有一次燒焦,想請教哪裡出問題?
依照網路做法是
1.熱鍋熱油
2.大火正面煎一分鐘
3.雞胸翻面轉小火,關蓋悶煮10Mins
4.關火悶1~2mins
因為大多沒講下多少油,我大概下10~20cc的橄欖油
自己覺得會燒焦的原因是熱油問題,
請問冒煙後,熱油應該轉什麼火以及多少秒數呢?
想煎出梅那效應的肉,看wiki好像要40度上下?
另外我使用的鍋是這種,有差嗎?

爆香也是類似問題,只知道轉小火爆香蒜頭,紅蔥頭,到香氣逼出微焦即可,但前面熱油應
該用什麼火跟幾秒呢?
