原句：We are given just so much food【as】will keep us alive.
你想問的是為何不能用that代替as。
如果要改用that，會缺少一個主詞，試著比較下面句子：
We are given just so much food【as】will keep us alive.
= We are given just so much food that it will keep us alive.
一般文法句型書都有教下面的句型：
So much… that 主詞 + 動詞
Such… that 主詞 + 動詞
但是你要記得that後面要接的是一個完整的句子。
因此回到原題，發現空格後面沒有主詞，直接是will 開始。
原句：We are given just so much food【 】will keep us alive.
這時候，就是在考你「準關代」的概念，準關代的定義可參考下面網站：

準關代有as, than, but這三個。這題是考as
注意，當【先行詞】前面有 as、so、such 或 the same等關鍵字時，後面通常以『 as』

as has ever lived.
因此，原句無誤。

注意the same...as和the same.. that不一樣。
The same…as是指『同類的』，但the same... that 是指『同一個』。
He wears the same clothes as I do.
是指他和我穿「同樣款式的衣服」，但不是同一件，因為一件衣服不可能同時被兩個人穿
著。
He wears the same clothes that I sold last week.
上面這句是說他現在穿的那一件衣服，就是我上星期賣掉的那「同一件」。
