以前一直搞不懂壽司中的蝦子為何能如此的直而不是彎曲,很多壽司的書都沒講,
後來借到了一本由電視冠軍花式壽司冠軍所寫的壽司書籍,裡面有提到壽司中的蝦子是
在水煮前蝦體穿上牙籤,使之固定,待熟後放進冰水中冷卻定型後抽出牙籤。 希望對
