[問題] 戚風蛋糕捲裂掉的原因
請教大家戚風蛋糕捲會斷裂跟蛋糕體的長寬及厚度有怎麼樣的關係嗎?
我的烤盤內側尺寸是28*26cm,我用長或寬的方向捲好像效果都不是太好...蛋糕厚度幾公
分比較好捲呢?
我在考丙級時捲過ㄧ整盤的一次,成果還比家裡的好......我真的不明白為什麼家裡的這麼
難捲?
之前練習丙級時,有試過總重600g或是450g,450g太薄,600g側面稍微看的出是橢圓柱體
。
我今天用白報紙捲,很快就脫皮了,之前是用烘焙紙,請問是不是有很大的問題......
試過不同食譜,有的沒加泡打粉,烤起來很薄(也有可能是我蛋白打的不夠發),捲起來
像是扁扁的饅頭...
(說到饅頭,桿不出漂亮的表面真的讓我很挫折啊啊...)
我實在不想再看到只能當三明治的戚風蛋糕捲了,麻煩大家幫忙,謝謝大家!
