.小麥需經過三道篩選,分別篩出比麥輕的麥桿等雜質,比麥重的石頭砂粒,以及以顏色
判別異常色的生病麥或混雜玉米粒。第三道辨色篩選的機器,據說台灣目前只有僑泰興有
。
.磨粉前需經2次加水「潤麥」,不是洗澡,是便於分離胚乳與麥麩。
.小麥經初次研磨碾壓破碎後,依比重不同分離出不同層次。
.磨完還得過篩,過篩機一台有幾十片篩網,比人還高,就像飲料店的手搖機,只是更大
台、且是水平搖篩。
.生產線均為正壓,能把脫逸粉塵排出,以免累積於空氣中釀災。
.每一批小麥都需檢驗,確認蛋白質等含量比例,才有配麥的依據。
.每一批麵粉需2種檢驗。儀器:一堆設備檢查麵粉筋度等物理性質。人感:實際做成麵包
、饅頭、麵條感受,他們每天吃到都怕還得吃吃吃。
.無人化,整座麵粉廠一天可以生產7百多噸麵粉,生產人員只有10幾個,人口密度最高是
包裝、倉儲、檢驗區,磨粉等主要生產流程都自動且無人化。麵粉廠附近也沒人,十分荒
涼感。
.自求多福1:麵粉專家說,漂白、增筋等合法化學添加仍舊普遍,但除非送驗,不然專家
也吃不出看不出來,請自求多福。
.自求多福2:麵粉依法需展開所有化學添加,可一目了然。但拿去做饅頭、麵包、麵條等
,成分只需寫「麵粉」,無須說明此麵粉是否化學處理過,還是請自求多福。
