[問題] 自製麵包會脹氣
用麵包機(國際牌105T)做的麵包,不管是速成或軟土司行程
吃了會脹氣(家人有人會,有人不會),有放涼再吃,也改用新鮮酵母製作
也是過小p密碼、低溫發酵法,都無法解決
用行程14(揉麵20分鐘,發酵40分鐘)-->拿出麵團分割後醒麵15分鐘
-->整形包餡-->發酵1小時-->烘烤
請問是我哪個步驟有問題嗎??或是有什麼可以改善的方法?
