台北市營養午餐每天倒掉好幾噸,估計浪費新台幣上億元,一群國小學童畫出「不挑
食營養午餐的逆襲」,本月13日起在「未來請柬」當代藝術展呈現,向大人建議怎麼找方
法挑戰學童挑食。
媒體曾報導台北市餐盒食品商業同業公會統計,台北市學校一日產出10公噸廚餘,換
算下來「年產值」高達1.8億元。台北市教育局當時澄清,初步調查每日廚餘量約有6公噸
。
對於減少營養午餐廚餘的方法,台北市教育局說,透過營養教育加強鼓勵學生攝取足
夠份量且均衡營養。例如不挑食、把飯菜吃光光。其次,請學校或營養師依據廚餘量作為
調整午餐菜單設計、慎選食材、改變烹調方式等方式處理。
美食作家徐仲認為,營養午餐倒掉,問題不全在學童挑食,大人也有責任。
徐仲說,他有一天實際吃了一餐國小的營養午餐,燙煮花椰菜、玉米筍燴豆莢、茄汁
義大利麵、炸雞塊和馬鈴薯濃湯,菜色設計貌似營養均衡,一吃發覺「很難吃,非常難吃
」。
台北市吳興國小六年一班的學童,利用暑假畫出「不挑食營養午餐的逆襲」,參與創
作學童說,「媽媽不是專業廚師但有用心。我們愛吃東坡肉、紅燒肉、魯肉飯、油飯、烤
雞腿、關東煮、披薩、漢堡…,選用在地的當季食材,不添加人工香料,能營養又好吃」
。
小朋友還透過畫作提案多項建議,包括:延長用餐時間、課間休息讓小朋友多動讓肚
子餓、學校屋頂都改造成小田園種有機蔬菜推農食教育等。
「未來請柬」當代藝術展9月13日起於汐止遠雄人文博物館展出,「不挑食營養午餐
的逆襲」參展,國小學童以小小公民身分參與,針對當代媒體、政治立場、都市自然及糧
食等議題提出小小公民的觀點。
