[其它] 新手 手沖悶蒸的問題
在下手沖菜鳥大約兩個月前開始研究手沖...
在悶蒸這環節一直有很大的問題OTZ
看了很多影片爬了很多文 加上三包咖啡豆泡完還沒成功過一次
廢話不多說直接說我的問題
簡單講就是我的悶蒸無法發起來成山丘
現在這包豆子是在歐舍買的M+尼加瓜拉
烘完才第10天 新鮮度應該很夠
磨豆是用復古型的手搖式,刻度似乎跟小郵筒不太一樣
但是我從很細慢慢調到很粗了,還是沒甚麼差別
有用尖嘴壺了
濾杯是圓錐形的
水溫大概抓90度,聽說高溫會好點甚至用到98度過一樣失敗
再來描述一下豆子發的狀況
水從中間慢慢倒下去之後,輕輕在粉的表面繞兩三圈到水都有蓋到粉就停了
接著觀察粉面,基本上幾乎沒有上升的跡象,然後水面各處會開始冒出一些小泡泡
也不像是氣衝太猛發到很高然後大砲砲衝破那樣
而是水面完全沒有膨脹上升,只有一小泡泡不斷冒出來而已
大概五秒鐘水就漸漸都收下去了...
這大概就是我每一杯悶蒸都遇到的狀況
很想知道到底哪裡出了問題,所以只好厚著臉皮來發問
