自己文章自己回，下班後又查了一陣子資料
終於從英文文件找到：

「In watchOS 8 and earlier, the Now Playing icon appears at the top of the
screen when you're listening to audio on your Apple Watch. In watchOS 9
and later, this icon doesn't appear, but the app that's playing audio
appears at the top of the Dock.」
看來是Watch OS 9真的把播放中Icon拔掉了
叫你點側面按鈕叫出Dock去選App
原本只要輕點一下上方的功能
變成要用力壓一下側邊按鈕，再點一次螢幕選取才能叫出來
真的是謝了庫克
如果很喜歡這個功能的，可以考慮先不要升級Watch OS
