[問題] 肉燥的問題
小孩子現在一歲八個月
做了一些肉燥給他吃
以前做肉燥算是手到擒來 已經相當熟練的一到菜
倒是我遇到一個問題
因為是小孩吃的
所以我不敢用大火炒肉 怕有乙烯醯胺
不敢放料酒
不敢放太重的調味料
不敢放醃漬品 降光 酸梅等
這次又不知道是買到的肉不新鮮還是怎樣
豬腥味很重
整個又粘又臭
請問有好方法可以炒出香噴噴 沒有豬臭味的淡味肉燥嗎?
PS :每天出門上班前都會幫小孩炒去托嬰中心吃的
