[問題] 焦糖爆炸?
自己作了電鍋蒸布丁,想加點焦糖醬
爬文看作法明明不難,我到底哪裡錯了
懇請賜教阿
我用鍋子倒了紅砂糖,開小火
大概10秒鍋邊的糖開始熔化呈褐色
大概再過5秒,鍋中間的糖蹦一聲噴出來
嚇了我一大跳立刻關火
我明明用鍋子怎麼搞的跟用噴槍烤焦糖一樣…
第二次加一點點熱水再加熱
看起來有好些
可是溫度降了之後又結塊
整個硬到像糖葫蘆的外殼
我到底哪個步驟錯了?
可以教教我嗎?感激不盡
