[問題] 涼拌小黃瓜不脆
話說周末我在家自己做涼拌小黃瓜時
雖然調味不錯(自以為?
但就是覺得小黃瓜不脆了~~外層是軟軟的
個人比較偏好脆脆的口感呢
以下簡單說明做的過程
四條小黃瓜未切之前用鹽巴搓洗
切長條狀後放在樂扣盒裡加上鹽巴 開始殺青~鹽巴大約兩凸匙
搖晃均勻後靜至約一小時,看他出水後才用開水洗淨
之後就直接把蒜頭辣椒都放進去了,唯一特別點的是加了檸檬和冰糖
是在想說~會不會是殺青過程鹽巴放太多或放太久~以至於出水量過多
跪求各位大大解惑~~~~~~~~~
