最近檸檬磅蛋糕一直失敗
所以po文想知道問題出在那裡……
我是採用油糖打發,雖然油水分離好幾次
但目前漸漸抓到技巧,做基本磅蛋糕時
有成功,即使有時油糖打發不小心會打到
些許油水分離,但烤完還是有澎起來
接著做檸檬奶酪磅蛋糕時,也成功了
但覺得味道有些平淡,除基本奶油…之類
就只有加奶油乳酪和檸檬皮而已
所以試作了其他配方,但發現只要有加
“液體”的蛋糕一定會失敗,澎不起來或變稞
例如加檸檬汁、蜂蜜、酸奶……
有考慮是不是過度攪拌所影響
也試過加粉後再加液體類,結果都一樣
目前是我試作的配方
奶油 90g
糖粉(or細砂糖)60g
蜂蜜 3大匙
全蛋 2個
檸檬皮 1顆
檸檬汁 半顆
低筋 100g(有試過120g)
溫度170度,烤40~50分
有看過其他網友的試作,都很成功
所以更不知道問題在哪?

這是在日本網頁看到的配方,對方有實作步驟,只是他有加泡打粉,其餘配方沒變。建議再加奶油和糖嗎?

不好意思~因為基本磅蛋糕ˋ抹茶和檸檬乳酪口味,沒加泡打粉都有成功,所以才想嘗試這個配方不加泡打粉是不是也能成功.
