[問題] 冷凍麻糬皮

1.問題敘述/食譜配方:
糯米 3.2kg
水0.2kg
糖1.2kg (砂糖970克+海藻糖230克海藻糖)
製程
1.糯米浸水磨成漿在蒸,水在這時候添加的
2.糖1.2kg稍微加水讓他蓋過一點點再加熱直到溶解,才加到蒸好的糯米裡面攪拌
想嘗試做能夠冷凍長效保濕的麻糬,不過一直失敗,大概冷凍兩天就硬化澱粉老化,海藻
糖添加已經到了總量的5%,比例上來說應該是夠的,不曉得上述製程哪裡有問題
