[問題] 生乳酪的奶油乳酪加熱?

這次要挑戰《免烤生乳酪蛋糕》
我是參考這個食譜

想請問大家:
(1) 奶油乳酪需要隔水加熱攪拌嗎
(想知道加熱、不加熱的差別)
(2) 不使用吉利丁情況下,成品可以直接冰冷凍保存嗎,內餡會不會變質呢
