[問題] 海綿蛋糕烤程中膨脹後內縮
1.問題敘述/食譜配方:初次用烤箱烤海綿蛋糕,遇到問題想請教大家,
配方如下:
蛋3顆
砂糖60g
低筋麵粉60g
橄欖油20g
步驟:
a. 先烤箱預熱170度
b. 把泡了溫水5分的全蛋+糖用電動打蛋器打到蛋糊滴落約3秒才消失的程度
c. 再把篩過的麵粉加入,用切拌法混合
d. 再把橄欖油倒入切拌均勻
e. 把麵糊倒入模型(有先抹奶油撒低粉),震出氣泡
f. 上下火各170度烤25分鐘
烤的過程中原本有膨脹,但後來慢慢內縮回原本麵糊高度,想請問是哪個步驟需改進呢?
想烤個漂亮的海綿蛋糕~
