[問題] 戚風蛋糕脫模,底部很潮溼?
燙麵法
蛋4,沙拉油40,水100,粉80,糖60
水浴,170度烤10分,150度烤40~50分
表面全乾,中間插針也全乾
放涼在脫模時,可以感覺到底部很潮溼,覺得很疑惑,是因為放涼冷熱溫差導致回潮?還
是烤不夠乾?還是燙麵法我的水份太多了?
求解
