[問題] 新手檸檬重乳酪蛋糕求指點
參考小綠豆的食譜
準備材料:(七吋活動分離式蛋糕模)
1.奶油乳酪 500g (預先放置室溫軟化)
2.雞蛋 4顆
3.細砂糖 120g
4.檸檬汁 兩大匙 (大約一顆檸檬)
5.香草精 1小匙
6.消化餅 100g
7.無鹽奶油 50g
除了沒放香草精以及是用8吋模,其他都有照食譜
成品

用塑膠刀切所以切面很醜,然後餅乾底收邊粗糙,整體來說口感不錯有點略甜
問題:
由於是用活動模,所以外層有包鋁箔紙,但拿掉鋁箔紙後,整個底座佈滿奶油的油感,而且餅乾底吃起來的口感是軟的,並非略硬的口感,請問是奶油要再減量嗎?另外依照這個配方可以減糖減多少呢?謝謝
