[問題] 檸檬塔的檸檬蛋黃醬
想詢問各位前輩製作檸檬塔的餡料-檸檬蛋黃醬不是要添加奶油下去嗎
因為我這次使用的是安佳的無鹽奶油(之前去超市買的時候冰在冷凍庫像石頭一樣)
結果我做完餡料鋪在塔皮上後請朋友試吃
他們說餡料吃起來有一種油味...就是很像隔壁人家在煎魚你家聞到那種臭油味
我自己想到可能的原因是會不會因為我再加熱奶油檸檬蛋黃液是直接用小火煮
而非隔水加熱結果導致奶油油水分離很嚴重?
還是有別的原因?
