[問題] 戚風倒扣掉下來

今天偷得一天意外的假期就立刻再來挑戰戚風蛋糕!!!!
巴特,我又失敗了QQ
配方是參考MASA老師的這個食譜:

(除了沒加堅果其餘都依照食譜內容)
今天難得是我戚風做失敗那麼多次以來感覺最接近成功的一次!
蛋白打發的狀況比以前都好,拌合時的麵糊也維持相當的稠度...
比較有問題的是烘烤的時間似乎比食譜的45還多了大概10分鐘左右(用探針測試不沾),蛋
糕有向上膨高,表面有裂痕,側邊好像有微縮,澎高後看的到成>的樣子,蛋糕形狀有點
像蘑菇,然後最後倒扣的時候整塊掉下來....

(吃起來好像太濕潤了一點,氣孔也很細還是是我沒等到他涼?)
請問我哪一個步驟出了問題呢?
真的好想烤出完美的戚風蛋糕啊> <
