[問題] 戚風又失敗了,請大家幫我看看
大家晚安
今天又做了一款伯爵茶戚風蛋糕,參考的是「甜點是另一個胃」裡的這個配方:

用的是8吋實心戚風烤模,前面操作的步驟應該沒有什麼問題(!?)蛋白霜有確實的打到濕
性發泡狀態
因為是用小烤箱溫度較高,所以烤箱調到大約160度左右(靠近底部所以有加墊一層鋁箔)
。
烤的過程感覺都還算順利,在烤箱裡也有澎起來
烤約20鐘後

烤滿55分鐘測試沒有沾黏後取出倒扣於架上(忘記拍照但跟一般烤好的模樣相似)
吃完飯回家發現烤模底盤已脫離邊圈
放涼約2.5hr後脫模
結果蛋糕長這樣

摸起來有點微濕,感覺蛋糕偏綿(緊)密而不是戚風該有的Q潤口感
側邊看起來也有點微凹
爬完文後的推測是:
1.沒有烤透? (可是已無沾黏,如果要繼續烤該如何判斷烤透)
2.倒扣時烤架沒辦法頂住烤模底盤,重量壓住了影響濕氣發散(是否該改用專用器具)
請問大家我應該如何改進呢?? 好想烤出成功的戚風蛋糕啊!!
