[問題] 巧克力戚風蛋糕捲~捲失敗
最近為了準備丙級考試~幾乎每天都在練習
目前比較會失敗的是海棉蛋糕和巧克力戚風蛋糕捲
海棉蛋糕的問題應該是出在消泡導致成品無法高於烤模
巧克力戚風蛋糕捲的問題則是出在捲的時候失敗
總是捲不緊,中間會有空隙,雖然空隙不到1公分,但是依照標準大於0.5公分就不合格了
我好頭痛啊~為了練習捲蛋糕,烤了好多次蛋糕,都沒人要吃了好煩惱
各位有沒有什麼捲的撇步可以教教我?
或是有沒有可以利用什麼東西來代替蛋糕,可以練習捲的動作啊?
我有在捲的邊緣畫幾刀淺紋了,但就是捲不緊,好煩惱哦>〃<
