戚風蛋糕實心模老是失敗,不知道問題在哪?
五吋實心圓形活動蛋糕模
蛋黃糊:
蛋黃30G
砂糖20G
沙拉油30G
食鹽2G
牛奶20G
抹茶粉15G
熱水40G
蛋白部分:
蛋白65G
砂糖60G
上下火180度C烤約30~40分鐘
目前最大的問題是出爐時都好好的,但一敲完倒扣,中心就會塌陷回縮
唯一成功的是做巧克力戚風忘了加牛奶,成品就是很完整,但偏乾
乾的程度吃起來像海綿蛋糕,但比海綿蛋糕少了點彈性
一直想要做濕潤點的戚風蛋糕,但問題就爆炸的多!
看過爐子裡的戚風蛋糕中心冒泡,請問這正常嗎?像火山爆發前的冒泡
超擔心他在烤箱內爆炸
調整蛋白霜的加糖順序,想讓蛋白霜更細緻,但容易消泡..
使用過泡打粉和塔塔粉的版本,也是失敗,我看不出來有加沒加的差異
倒扣的方式也研究過,出爐後高摔,使用倒扣架,讓熱氣順利散出等等
牙籤試蛋糕中心都是沒沾黏才拿出來
最近這次做的也是一倒扣,中心就回縮
感覺中心的戚風蛋糕有爬上去,但又摔下來
請問是用實心模的問題嗎?我應該要換中空模嗎T__T
這個配方的水分算多嗎?除了中心外,外層的部分吃起來是像北海道戚風Q潤的感覺
煩請各位高手解答
