
[問題] 香草戚風蛋糕裂開+塌陷

這是剛烤出來的戚風蛋糕
麵糊部份5蛋黃 120g低粉 90g奶 60g油 30g糖 20g香草精
蛋白霜5蛋白 60g糖 2g塔塔粉
烤箱預熱到160度放入開始烘烤
大約30分鐘後表面整個炸開 @@~
約40分鐘後拿出來直接在烤架上倒扣放涼
倒扣時開始縮小
不知道這是那邊出了問題 Orz
