[問題] 解決不了的戚風凹洞
戚風底部的凹洞一直是我做蛋糕無法克服的部分
先貼上我的配方
蛋黃 3個
油 36g
牛奶 40g
糖 10g
低粉 60g
蛋白 3個
糖 60g

烤溫
上/下 :150/150 烤10分
110/140 烤完
烤約15分後開始爆頂 冷卻微縮
脫膜後底部有洞 外圈較乾 表層較濕

上/下 :150/150 烤10分
120/130 烤完
時間:40分
表層淺層微裂 底部沒洞 頂部冷卻內縮

採低溫烤法
上/下 :120/130 烤25分
120/140 烤10分
120/150 烤5分
時間:40分
表層裂開 底部有洞 冷卻後內縮
這幾天烤下來 蛋糕邊緣的組織都正常
但底部往上逼的麵糊使中間的口感如乳酪蛋糕紥實
我用的烤箱是尚朋堂so3211
一般烤法和低溫烤法都試了
但底部的洞還是存在 很挫折
希望板友能幫我看看問題點在哪?
