[問題] 如何去除木瓜結塊變苦的特性?
今天做了木瓜冰淇淋
材料:
牛奶 200g
鮮奶油 125g
木瓜 180g
玉米澱粉1.5大匙
二砂 40g
奶粉 20g
步驟
1.將玉米澱粉以外的材料用果汁機混合
2.加入玉米澱粉再加熱攪拌
3.放涼之後就下去用冰淇淋機打
剛用果汁機打好的半成品很美味
但最後的冰淇淋吃起來很粉而且苦掉了...苦掉了...苦掉了!
深深覺得木瓜是一種很難搞的食材囧
想請問怎麼解決木瓜這種變苦又易凝結的特性?
不知道加熱破壞木瓜酵素可不可行?可行的話又該加到幾度呢?
