[請問] 炒飯會黏在鍋子上...
炒飯做完時,鍋內黏了一層飯在上面= =
想請問這樣正常嗎?
我印象中外面賣炒飯的炒完都粒粒分明,水沖一下就把殘料沖掉...
我用的是Tefal的這種不鏽鋼炒鍋:

作法是這樣,首先冷油熱鍋,等到油稍為有點波動後,
就把培根和蒜末放下去爆香,等看完油爆波滋波滋噴的到處都是後,
把飯放下去,炒了一陣子後,把沙茶醬跟醬油混合的醬汁倒下去再拌
炒一下然後起鍋。
但起鍋後發現一層飯黏在鍋面......
想請問一下兩個問題:
第一是怎麼避免飯黏在鍋內?
第二是怎麼避免爆香的時候油爆噴的到處都是?
是我的油溫太高嗎?冷油熱鍋時火力應該小一點?
