[問題] said+子句的時態??

大家都知道say and tell的差異
可是我在看例句的時候，發現不論是say or tell (said or told)後面的時態都有變化
有時候可以是現在式，有時候又可以是過去式
我想請問一下，當在使用said and told的時候，後面接的句子有一定的時態規則嗎?
先拿said當例子
--example--
※My father says he loves me every day.(says現在，後面接現在loves，沒問題)
但是也有
1)I said, "I'm hungry." (said為過去，後面卻還是接現在am)
2)He said that he likes coffee.(said-likes)
3)Tara said, "I love you." (said-love)
4)She said that both of her parents are doctors.(said-are)
所以這部分，我在想是不是因為是state 一種 habitual form所以才會後面接現在式
可是這樣例句1就會顯得很奇怪，如果主詞改成第三人稱
She said, "She is hungry."→成立?
She said that she was hungry.→成立?
※因為我也有看到Said-過去式句子
Ex: Ray said that he was tired.
但是如果主詞變成第一人稱就是 I said,"I'm tired."(這句成立沒問題)
是不是因為" "mark，變成是引述"當時"所以用現在式
所以 Ray said,"I am tired."→成立?
or Ray said,"He is tired."→成立?
※如果said後面都接過去式是不是永遠都是文法上正確??
a) She said that it was raining.
b) She said that she needed to eat chocolate every day.
c) He said it was too late to go home.
d) They said that they could finish the work by themselves.
※所有的規則適用在tell/told上面嗎??
