[其他]室溫冰滴的健康問題?
這邊有個怕死的安全性想要請教一下
在室溫下冰滴,即使上水槽用冰塊,下壺沒處理應該溫度還是室溫吧?
雖說發酵也是冰滴的風味之一,但如果沒控制,怕出現問題菌種...
是想問說有人預先放入特定菌種的嗎,如果有的話何處購買?
(像是現代的醬油工業那樣,讓豆子被挑選的低毒性黴菌覆蓋)
另外的想法是冰鎮下壺,或改用小型,可以放入冰箱中的冰滴壺
不過會比較麻煩些

有跟做食品安全的朋友詢問了,咖啡沒有高蛋白,長出來的菌危險性不算太高
他老兄之前就是在醬油廠工作,曾有米麴霉塗佈不徹底,結果長出黑霉導致該匹醬油
出現酸味(分泌檸檬酸)的事件
