關於手沖的技術
各位愛好咖啡的朋友,最近買了一隻手沖壺並開始研究手沖的技巧
不過卻發現幾個疑惑點,希望有經驗的同好能幫助我 謝謝
1.看了幾本書,裡面提到在鋪好粉後在中央用小湯匙壓一個小凹槽
其實不是很離解凹槽的目的
2.在悶煮咖啡時,有人提到不能讓下方滴出咖啡液,是否真的是必要的?
3.另外手沖咖啡能否沖出CREAMA?據我了解CREAMA式咖啡受高溫高壓油脂乳化過程產生的
希望大家能不吝嗇的給我一些指點 感謝
